Sausage and Peppers

Ingredients:

  • 1 lb (450g) Italian sausage links (mild or spicy)
  • 2–3 bell peppers, sliced (mix colors for visual appeal)
  • 1 medium onion, sliced

  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • ½ tsp red pepper flakes (optional, for heat)

Steps:

  1. Cook the Sausage:
    • Heat 1 tbsp olive oil in a large skillet over medium heat.

  2. Sauté Peppers and Onions:
    • In the same skillet, add remaining olive oil.
    • Sauté onions and bell peppers 5–7 minutes until softened.

  3. Combine Sausage & Peppers:
    • Return sausage to the skillet.
    • Optional: stir in tomato sauce and simmer 5–10 minutes for a saucier dish.
    • Season with salt, pepper, and red pepper flakes.
  4. Serve:
    • Serve over rice, pasta, or in toasted hoagie rolls for sandwiches.
    • Optional garnish: fresh parsley or grated Parmesan.
