Potato meatball bake

Potato Meatball Bake is a hearty comfort dish made with tender potatoes, juicy meatballs, and a cheesy, savory sauce baked together in one pan.


Ingredients

  • 1 lb ground beef (or prepared meatballs)
  • 4–5 medium potatoes, peeled and sliced
  • 1 small onion, chopped
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 cup cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

1. Prepare the Meatballs

  • If using ground beef, mix with salt, pepper, and garlic powder.
  • Form into small meatballs.

2. Prepare the Potatoes

  • Slice potatoes thinly so they cook evenly.

3. Make the Sauce

  • In a bowl mix cream soup and milk until smooth.

4. Assemble the Bake

  1. Grease a baking dish.
  2. Layer half the sliced potatoes on the bottom.
  3. Add half the onion.
  4. Place the meatballs on top.
  5. Add remaining potatoes and onions.
  6. Pour the sauce evenly over everything.

5. Bake

  • Cover with foil and bake at 375°F (190°C) for 45 minutes.
  • Remove foil, sprinkle cheese on top, and bake 15 more minutes until golden and bubbly.

Serving Ideas

Serve with:

  • Green beans
  • Salad
  • Steamed vegetables
  • Garlic bread
