Potato Meatball Bake

Ingredients:

  • 1–1.5 lbs (450–680g) potatoes, peeled and diced
  • 12–16 cooked meatballs (store-bought or homemade)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 cup marinara sauce (or your favorite pasta sauce)
  • 1 small onion, diced (optional)
  • Salt & pepper to taste
  • 1–2 tbsp olive oil or butter

Steps:

  1. Preheat Oven:
    • 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the Potatoes:
    • Boil diced potatoes in salted water until tender, about 10–12 minutes. Drain and toss with a little butter or olive oil, salt, and pepper.
  3. Assemble the Bake:
    • Spread half of the potatoes in the baking dish.
    • Add a layer of meatballs and pour half the marinara sauce over them.
    • Add remaining potatoes on top, then the rest of the sauce.
    • Sprinkle shredded cheese over the entire dish.
  4. Bake:
    • Cover with foil and bake 20–25 minutes.
    • Remove foil and bake another 10 minutes until cheese is bubbly and golden.
  5. Serve:
    • Let cool 5 minutes before serving.
    • Optional: garnish with chopped parsley or grated Parmesan.
