Ground Beef Stew 🥩🥕🥔

A hearty, comforting stew made with ground beef, vegetables, and savory broth. It’s quicker than using large stew meat but still full of flavor and perfect for chilly days.


🧾 Ingredients (Serves 4–6)

  • 1 lb (450g) ground beef
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 3–4 potatoes, peeled and diced
  • 2 stalks celery, chopped
  • 4 cups beef broth
  • 1 tsp dried thyme or rosemary
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 tbsp tomato paste (optional, for richness)
  • 1–2 tbsp flour (optional, for thicker stew)

👩‍🍳 Instructions

1. Brown the ground beef

  • Heat oil in a large pot or Dutch oven over medium heat
  • Add ground beef and cook until browned, breaking it up with a spatula
  • Drain excess fat if necessary

2. Sauté aromatics

  • Add onion, garlic, and celery to the pot
  • Cook 3–5 minutes until softened

3. Add vegetables & seasonings

  • Stir in carrots, potatoes, thyme, paprika, salt, and pepper
  • Mix in tomato paste if using

4. Add liquid

  • Pour in beef broth
  • Bring to a boil, then reduce to a simmer

5. Simmer

  • Cover and simmer 25–35 minutes until vegetables are tender
  • Optional: mix flour with a little cold water and stir in to thicken

6. Serve

  • Taste and adjust seasoning
  • Serve hot with bread or over rice for a filling meal

🌟 Tips

  • For more flavor: sauté the veggies in butter and oil or add a splash of Worcestershire sauce
  • Add frozen peas or green beans in the last 5 minutes for color and sweetness
  • Can be made in a slow cooker: combine all ingredients and cook low 6–8 hours
