- 1 lb (450g) ground beef
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and chopped
- 3–4 potatoes, peeled and diced
- 2 stalks celery, chopped
- 4 cups beef broth
- 1 tsp dried thyme or rosemary
- 1 tsp paprika
- Salt & pepper to taste
- 2 tbsp tomato paste (optional, for richness)
- 1–2 tbsp flour (optional, for thicker stew)

1. Brown the ground beef
- Heat oil in a large pot or Dutch oven over medium heat
- Add ground beef and cook until browned, breaking it up with a spatula
- Drain excess fat if necessary
2. Sauté aromatics
- Add onion, garlic, and celery to the pot
- Cook 3–5 minutes until softened
3. Add vegetables & seasonings
- Stir in carrots, potatoes, thyme, paprika, salt, and pepper
- Mix in tomato paste if using
4. Add liquid
- Pour in beef broth
- Bring to a boil, then reduce to a simmer

- Cover and simmer 25–35 minutes until vegetables are tender
- Optional: mix flour with a little cold water and stir in to thicken
6. Serve
- Taste and adjust seasoning
- Serve hot with bread or over rice for a filling meal
