German-Style Kraut with Pork Chops

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • Salt and black pepper, to taste
  • 1–2 tbsp vegetable oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14–16 oz) sauerkraut, drained (or homemade)
  • 1 apple, peeled and chopped (optional)
  • ½ tsp caraway seeds (optional)
  • ½ cup chicken or beef broth

Instructions

  1. Season and sear the pork chops
    Season chops with salt and pepper. Heat oil in a skillet over medium-high heat and sear pork chops 2–3 minutes per side until browned. Remove and set aside.
  2. Cook the aromatics
    In the same skillet, sauté onions and garlic until soft and fragrant.
  3. Add sauerkraut and apple
    Stir in sauerkraut, chopped apple, and caraway seeds. Pour in broth and mix well.
  4. Simmer with pork
    Nestle the pork chops on top of the kraut. Cover and simmer on low heat 20–25 minutes until pork is cooked through and tender.
  5. Serve
    Serve pork chops with kraut on the side, optionally with boiled potatoes or mashed potatoes.

Optional Garnishes

  • Fresh parsley chopped on top
  • A drizzle of mustard or gravy

✅ Tip: For extra flavor, brown the pork chops in butter and a little smoked paprika. You can also make this in a slow cooker by layering the ingredients and cooking on low for 4–5 hours.
