Fried Potatoes, Onions, and Sausage Skillet

Ingredients:

  • 3–4 medium potatoes, diced (Yukon Gold or russet work best)
  • 1 medium onion, diced
  • 1–2 cups sausage (sliced or crumbled; breakfast sausage or smoked sausage)
  • 2–3 tbsp oil or butter
  • Salt & pepper
  • Optional: paprika, garlic powder, or fresh herbs like parsley

Steps:

  1. Prep Potatoes:
    • Dice potatoes into small cubes for quicker cooking.
    • Optional: parboil potatoes for 5 minutes to speed up frying and get extra fluffy insides.
  2. Cook Sausage:
    • Heat skillet over medium heat, add sausage, and cook until browned.
    • Remove sausage and set aside (leave drippings in skillet).
  3. Cook Potatoes & Onions:
    • Add oil/butter if needed.
    • Add potatoes and cook 10–15 minutes, stirring occasionally, until golden and tender.
    • Add onions halfway through cooking so they soften and caramelize.
  4. Combine & Season:
    • Return sausage to skillet.
    • Mix everything, season with salt, pepper, and optional spices.
    • Cook 2–3 more minutes so flavors meld.
  5. Serve Hot:
    • Perfect on its own, or with fried eggs, toast, or biscuits.
