Coconut Chewies Recipe

Ingredients:

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups sweetened shredded coconut

Steps:

  1. Preheat Oven:
    • 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Wet Ingredients:
    • Cream together butter, brown sugar, and granulated sugar until light and fluffy.
    • Beat in eggs one at a time, then add vanilla.
  3. Mix Dry Ingredients:
    • In a separate bowl, whisk together flour, baking powder, and salt.
  4. Combine:
    • Gradually mix dry ingredients into wet ingredients.
    • Fold in shredded coconut until evenly distributed.
  5. Shape Cookies:
    • Scoop rounded tablespoons of dough onto prepared baking sheet, spacing 2 inches apart.
  6. Bake:
    • 10–12 minutes, until edges are lightly golden.
    • Let cool on the baking sheet 5 minutes, then transfer to a wire rack.

These are soft, chewy, and full of coconut flavor.
