Zuppa toscana

Here’s a classic Zuppa Toscana recipe 🍲🥔—a creamy, hearty Italian soup made famous by Olive Garden:


🥘 Ingredients (4–6 servings):

  • 1 lb (450g) Italian sausage (mild or spicy, casings removed)
  • 4–5 medium potatoes, thinly sliced or diced
  • 1 small onion, chopped
  • 2–3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 2 cups kale or spinach, chopped
  • Salt & pepper to taste
  • Red pepper flakes (optional, for heat)
  • Olive oil for sautéing

👩‍🍳 Instructions:

1. Cook the Sausage

  • In a large pot, heat a little olive oil
  • Brown the sausage, breaking into small pieces
  • Remove and set aside

2. Sauté Vegetables

  • In the same pot, sauté onions and garlic until soft
  • Add potatoes and cook 3–5 minutes

3. Simmer Soup

  • Return sausage to the pot
  • Add chicken broth and bring to a boil
  • Reduce heat and simmer 15–20 minutes until potatoes are tender

4. Add Cream & Greens

  • Stir in heavy cream
  • Add kale or spinach and cook 2–3 minutes until wilted
  • Season with salt, pepper, and optional red pepper flakes

5. Serve

  • Ladle into bowls
  • Optional: top with grated Parmesan and crusty bread

💡 Tips:

  • For extra richness, sauté sausage in a little butter with the onions
  • Swap potatoes for cauliflower for a lower-carb version
  • Freeze leftovers without cream; add cream when reheating
