Walking Taco Casserole is a fun, family-friendly twist on the classic “walking taco”—all the flavors of a taco served in a crunchy, cheesy baked dish. Think Doritos + taco meat + cheese + toppings all layered together 😋


🌮 Ingredients:

  • 500g (1 lb) ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (or Rotel-style tomatoes with chilies)
  • 1 can black beans (drained, optional)
  • 1 cup corn (optional)
  • 2–3 cups crushed tortilla chips (like nacho chips or Doritos)
  • 1½–2 cups shredded cheese (cheddar or Mexican blend)

🔥 Instructions:

  1. Cook the beef
    • Brown ground beef in a pan, drain excess fat
    • Add taco seasoning and tomatoes, simmer a few minutes
  2. Mix filling
    • Stir in beans and corn (if using)
  3. Layer the casserole
    • In a baking dish:
      • Layer crushed chips
      • Add beef mixture
      • Sprinkle cheese
    • Repeat layers if desired
  4. Bake
    • 180°C (350°F) for 15–20 minutes until cheese is melted
  5. Top and serve
    • Add lettuce, sour cream, salsa, jalapeños, or avocado

🍽️ Tips:

  • Add chips just before baking so they stay crunchy
  • Use spicy chips for extra kick 🌶️
  • Great for parties or quick weeknight dinners
