🛒 Ingredients

  • 500 g ground beef (or turkey)
  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, garlic powder, salt, pepper)
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 cup salsa
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sour cream, chopped lettuce, diced tomatoes, sliced olives, jalapeños

👩‍🍳 Instructions

  1. Preheat oven:
    • 180°C (350°F).
  2. Cook meat:
    • Brown ground beef in a pan.
    • Drain excess fat.
    • Stir in taco seasoning and a splash of water, cook 2–3 minutes.
  3. Assemble casserole:
    • In a baking dish, layer:
      1. Crushed tortilla chips
      2. Cooked meat
      3. Corn & black beans
      4. Salsa
      5. Half the cheese
    • Repeat layers if your dish is deep. Top with remaining cheese.
  4. Bake:
    • 15–20 minutes until cheese is melted and bubbly.
  5. Serve:
    • Add optional toppings like sour cream, lettuce, tomatoes, or olives.

💡 Tips

  • For extra crunch, sprinkle extra crushed chips on top before baking.
  • Use rotisserie chicken instead of beef for a quicker version.
  • Can be made ahead and refrigerated; just bake before serving.
