Stuffed bell peppers 🌶️🍽️

Stuffed bell peppers are a classic dish where bell peppers are filled with a savory mixture of meat, rice, vegetables, and seasonings, then baked until tender.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • ½ cup shredded cheese (cheddar or mozzarella)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

1. Prepare peppers

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the peppers and remove seeds.

2. Cook filling

  • In a skillet, cook ground meat with onion and garlic until browned.
  • Stir in rice, half of the tomato sauce, and seasonings.

3. Stuff peppers

  • Spoon the mixture into each pepper.
  • Place peppers upright in a baking dish.

4. Bake

  • Pour remaining tomato sauce over the peppers.
  • Cover with foil and bake 30 minutes.

5. Add cheese

  • Sprinkle cheese on top and bake another 10 minutes until melted.

Tips

  • Use quinoa or cauliflower rice for a lighter version.
  • Add corn, beans, or mushrooms to the filling for extra flavor.
  • Yellow and red peppers are usually sweeter than green ones.

🌶️ Serving idea: Serve with a fresh salad or garlic bread for a complete meal.
