Stuffed bell peppers 🌶️🍽️
Stuffed bell peppers are a classic dish where bell peppers are filled with a savory mixture of meat, rice, vegetables, and seasonings, then baked until tender.
Ingredients
- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- ½ cup shredded cheese (cheddar or mozzarella)
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
1. Prepare peppers
- Preheat oven to 375°F (190°C).
- Cut the tops off the peppers and remove seeds.
2. Cook filling
- In a skillet, cook ground meat with onion and garlic until browned.
- Stir in rice, half of the tomato sauce, and seasonings.
3. Stuff peppers
- Spoon the mixture into each pepper.
- Place peppers upright in a baking dish.
4. Bake
- Pour remaining tomato sauce over the peppers.
- Cover with foil and bake 30 minutes.
5. Add cheese
- Sprinkle cheese on top and bake another 10 minutes until melted.
Tips
- Use quinoa or cauliflower rice for a lighter version.
- Add corn, beans, or mushrooms to the filling for extra flavor.
- Yellow and red peppers are usually sweeter than green ones.
