🇬🇷 What is Spanakopita?

Spanakopita is traditionally made with:

  • Spinach
  • Feta cheese
  • Herbs (like dill and parsley)
  • Layers of thin, crispy phyllo (filo) dough

🥘 Ingredients (serves 6–8)

  • 1 lb (450g) fresh spinach (or frozen, thawed & drained)
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta (optional for creaminess)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/4 cup olive oil or melted butter
  • 8–10 sheets phyllo dough
  • Salt, pepper, and a pinch of nutmeg (optional)

🥄 Instructions

  1. Prepare filling
    • Sauté onion and garlic in a little oil.
    • Add spinach and cook until wilted (or heated through).
    • Let cool, then mix with feta, ricotta, eggs, and seasoning.
  2. Layer the phyllo
    • Brush a baking dish with oil or butter.
    • Lay down 4–5 sheets of phyllo, brushing each with oil.
  3. Add filling
    • Spread the spinach mixture evenly.
  4. Top layers
    • Add remaining phyllo sheets on top, brushing each layer.
  5. Bake
    • Bake at 180°C (350°F) for 35–40 minutes until golden and crispy.
  6. Serve
    • Let cool slightly, then cut into squares or triangles.

💡 Tips

  • Keep phyllo covered with a damp cloth so it doesn’t dry out
  • Add herbs generously for authentic flavor
  • Works great as a snack, appetizer, or light meal
