Smothered pork chops are a true comfort dish—pan-seared chops slow-simmered in rich onion gravy until they’re fork-tender and packed with flavor. 😋


🧾 Ingredients (Serves 3–4)

For the pork chops:

  • 4 pork chops (bone-in or boneless)
  • Salt & pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp flour (for dredging)
  • 2 tbsp oil

For the gravy:

  • 1 large onion, sliced
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups chicken broth (or beef broth)
  • Optional: mushrooms or a splash of cream

👩‍🍳 Instructions

1. Season & dredge

  • Season pork chops with salt, pepper, garlic powder, and paprika
  • Lightly coat with flour

2. Sear

  • Heat oil in a skillet over medium heat
  • Cook chops 3–4 minutes per side until golden
  • Remove and set aside

3. Make the gravy

  • In the same skillet, melt butter
  • Add onions (and mushrooms if using), cook until soft and browned
  • Stir in flour and cook 1–2 minutes
  • Slowly add broth, stirring until smooth and thick

4. Smother

  • Return pork chops to the skillet
  • Spoon gravy over them
  • Cover and simmer 20–30 minutes until tender

🍽️ Serve With

  • Mashed potatoes 🥔
  • Rice or gravy-soaked biscuits
  • Green beans or collard greens
