Instructions

1. Prepare the roast

  • Rub pork roast with salt, pepper, paprika, and thyme.

2. Layer the slow cooker

  • Place onion slices and garlic at the bottom.
  • Add optional vegetables if using.
  • Place pork roast on top and pour broth (and apple cider if using) around it.

3. Cook

  • Cover and cook on low for 8 hours or high for 4–5 hours, until pork is tender and easily shredded.

4. Serve

  • Remove roast, slice or shred, and serve with vegetables.
