Here’s an easy and tasty slow cooker chicken recipe — perfect for a hands-off dinner:


🧾 Ingredients (4 servings)

  • 4–6 chicken thighs or breasts (bone-in or boneless)
  • 1 cup chicken broth
  • 1 small onion, sliced
  • 2–3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup chopped vegetables (carrots, potatoes, bell peppers)

🍗 Instructions

  1. Prep the slow cooker:
    • Place sliced onions and vegetables (if using) at the bottom of the slow cooker.
  2. Season the chicken:
    • Rub chicken with salt, pepper, paprika, and thyme.
    • Place chicken on top of the vegetables.
  3. Add liquids:
    • Pour chicken broth around (not over) the chicken to keep seasoning on top.
    • Add minced garlic.
  4. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked (internal temp 165°F / 74°C) and tender.
  5. Serve:
    • Remove chicken and vegetables.
    • Optional: thicken the cooking juices with a slurry of 1 tbsp cornstarch + 2 tbsp water for a quick gravy.
    • Serve over rice, mashed potatoes, or pasta.

💡 Tips:

  • Boneless chicken cooks faster and stays very tender.
  • You can add flavor variations: lemon slices, barbecue sauce, soy sauce, or cream of mushroom soup.
  • For crispy skin, sear the chicken in a skillet for 2–3 minutes per side before slow cooking.
