Slow cooker beef stew

Here’s a hearty and easy Slow Cooker Beef Stew recipe 🥩🥕🥔 — perfect for a warm, comforting meal.


Ingredients (Serves 4–6)

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 2–3 tbsp cornstarch (optional, for thickening)
  • 2–3 tbsp water (optional, for thickening)

Instructions

  1. Brown the beef (optional but adds flavor)
    • Heat olive oil in a skillet over medium-high heat.
    • Season beef with salt and pepper.
    • Brown cubes on all sides, then transfer to slow cooker.
  2. Add vegetables & seasonings
    • Add carrots, potatoes, onion, garlic, Worcestershire sauce, thyme, rosemary, and bay leaves.
    • Pour in beef broth. Stir to combine.
  3. Cook
    • Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.
  4. Optional: Thicken the stew
    • Mix cornstarch with water to make a slurry.
    • Stir into the stew during the last 15–20 minutes of cooking on high, or until desired thickness is reached.
  5. Serve
    • Remove bay leaves. Taste and adjust seasoning with salt and pepper.
    • Serve hot with bread or over mashed potatoes.

Tips

  • Extra flavor: Add a splash of red wine to the broth before cooking.
  • Vegetable variety: Include celery, parsnips, or turnips for extra depth.
  • Make ahead: Stew often tastes even better the next day after flavors meld.
