🍲 Sausage Potato Soup

🛒 Ingredients

  • 250–300 g sausage (sliced or crumbled)
  • 3–4 medium potatoes (peeled & diced)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups chicken broth
  • 1 cup milk (or cream for richer soup)
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt & black pepper (to taste)
  • ½ tsp paprika (optional)
  • ½ tsp dried thyme or oregano
  • ½ cup shredded cheddar cheese (optional)
  • Green onions or parsley (for garnish)

  1. Cook the sausage:
    • In a large pot, cook sausage until browned.
    • Remove and set aside (leave a little oil for flavor).
  2. Sauté aromatics:
    • Add butter, then sauté onion until soft.
    • Add garlic and cook for 1 minute.
  3. Make base:
    • Stir in flour and cook for 1–2 minutes (this thickens the soup).
  4. Add liquids:
    • Slowly pour in chicken broth while stirring to avoid lumps.
  5. Add potatoes:
    • Add diced potatoes, salt, pepper, paprika, and herbs.
    • Simmer for 15–20 minutes until potatoes are tender.
  6. Finish:
    • Add cooked sausage back in.
    • Stir in milk (or cream) and cheese if using.
    • Simmer another 5 minutes.
  7. Serve:
    • Garnish with green onions or parsley.

  • For extra flavor, use smoked or spicy sausage
  • Mash a few potatoes in the pot for a thicker texture
  • Add carrots or corn for more veggies
  • For a lighter version, use milk instead of cream
