Ricotta Stuffed Zucchini (Light, Cheesy & Delicious) 🥒🧀
A healthy, low-carb dish that’s creamy, flavorful, and perfect as a side or main!
📝 Ingredients:
- 3–4 medium zucchini
- 1 cup ricotta cheese
- ¼ cup grated parmesan
- 1 egg
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- Salt & black pepper (to taste)
- Optional: spinach, chili flakes, fresh herbs (basil/parsley)
👩🍳 Instructions:
1. Prep the Zucchini
- Slice zucchini in half lengthwise.
- Scoop out the center to create “boats.”
2. Make the Filling
- In a bowl, mix ricotta, parmesan, egg, garlic, salt, pepper, and optional extras.
3. Stuff the Zucchini
- Fill each zucchini boat with the ricotta mixture.
4. Bake
- Place in a greased baking dish.
- Drizzle with olive oil.
- Bake at 180°C (350°F) for 20–25 minutes until tender and golden.
5. Serve
- Garnish with herbs and a sprinkle of parmesan.
