Ricotta cake

Ricotta cake is a soft, moist cake made with creamy Ricotta. It has a light texture and a delicate flavor, often served with powdered sugar or fruit. 🍰

Ricotta Cake

Ingredients

  • 1 cup ricotta cheese
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 3 eggs
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8- or 9-inch cake pan.
  2. Cream butter and sugar
    In a bowl beat butter and sugar until light and fluffy.
  3. Add eggs and ricotta
    Mix in eggs one at a time, then add ricotta and vanilla. Stir until smooth.
  4. Combine dry ingredients
    In another bowl mix flour, baking powder, and salt.
  5. Mix batter
    Gradually add dry ingredients to the ricotta mixture. Stir in lemon zest if using.
  6. Bake
    Pour batter into the pan and bake 40–50 minutes until a toothpick comes out clean.
  7. Cool and serve
    Let the cake cool, then dust with powdered sugar.

  • A drizzle of Honey
