Potato Soup 🥔🥣
A warm, creamy comfort soup made with simple ingredients.
🧾 Ingredients (4–6 servings)
- 4–5 potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup milk or heavy cream
- 2 tbsp butter
- 2 tbsp flour
- 1 cup shredded cheddar cheese (optional)
- ½ tsp salt
- ½ tsp black pepper
👩🍳 Instructions
- Cook potatoes
In a large pot add potatoes, onion, garlic, and chicken broth.
Simmer 15–20 minutes until potatoes are soft. - Make the creamy base
In a small pan melt butter and stir in flour. Cook 1–2 minutes to make a roux. - Add milk
Slowly whisk in the milk until smooth and slightly thick. - Combine
Pour the creamy mixture into the pot with the potatoes. - Mash slightly
Mash some of the potatoes with a spoon or potato masher to thicken the soup. - Add cheese
Stir in cheddar cheese until melted. - Season
Add salt and pepper to taste.
