Simple Sautéed Okra

Ingredients:

  • 2 cups fresh okra, sliced
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • Optional: a pinch of chili flakes

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic; sauté until fragrant.
  3. Toss in the okra, stir occasionally for 8–10 minutes until tender but not slimy.
  4. Season with salt, pepper, and optional chili flakes. Serve warm.

Cold Okra Salad

Ingredients:

  • 2 cups cooked okra (from above or boiled)
  • 1 small tomato, chopped
  • 1/2 cucumber, diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt & pepper to taste

Instructions:

  1. Mix all ingredients in a bowl.
  2. Chill for 30 minutes in the fridge.
  3. Serve cold as a refreshing side dish.

This keeps okra tender, flavorful, and not slimy, perfect for a light summer or winter meal.
