🥕 Moist & Spiced Carrot Cake

🥣 Ingredients
For the cake:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 ½ tsp cinnamon powder
- ½ tsp nutmeg (optional)
- ½ tsp salt
- 1 cup sugar (white or brown)
- Âľ cup oil
- 3 eggs
- 2 cups grated carrots
- 1 tsp vanilla essence
- ½ cup chopped walnuts or raisins (optional)
For cream cheese frosting:
- 200g cream cheese
- ½ cup butter (softened)
- 1–1 ½ cups powdered sugar
- 1 tsp vanilla essence

- Preheat oven to 180°C (350°F) and grease a baking pan.
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk eggs, sugar, oil, and vanilla until smooth.
- Add dry ingredients into wet mixture and mix gently.
- Fold in grated carrots (and nuts if using).
- Pour into pan and bake for 35–45 minutes or until a toothpick comes out clean.
- Let it cool completely before frosting.

Beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy. Spread over cooled cake.
