Mexican Tortilla Casserole

Ingredients

  • 8–10 corn or flour tortillas
  • 2 cups cooked shredded chicken (or ground beef)
  • 1 can black beans (drained & rinsed)
  • 1 cup corn
  • 1½–2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa or enchilada sauce
  • ½ cup sour cream (optional)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Prepare filling
    • Mix chicken (or beef), beans, corn, salsa, and spices in a bowl.
  3. Layer the casserole
    • Grease a baking dish.
    • Add a layer of tortillas.
    • Spread some filling.
    • Sprinkle cheese.
    • Repeat layers (like lasagna).
  4. Top it off
    • Finish with tortillas, sauce, and lots of cheese on top.
  5. Bake
    • Bake for 25–30 minutes until bubbly and golden.
  6. Rest & serve
    • Let it sit for 5–10 minutes before slicing.

Optional Toppings

  • Fresh cilantro 🌿
  • Avocado or guacamole 🥑
  • Sour cream
  • Jalapeños for heat 🌶️
