This is a fresh, tangy, and crunchy salad perfect as a side dish. The vegetables are marinated in a simple dressing, which enhances their flavor over time.


🍽 Ingredients

  • 2 cups cherry tomatoes, halved (or diced regular tomatoes)
  • 1–2 cucumbers, sliced or diced
  • 1/4 cup red onion, thinly sliced (optional)
  • 2–3 tbsp olive oil
  • 1–2 tbsp vinegar or lemon juice
  • 1 tsp sugar (optional)
  • Salt & black pepper
  • Fresh herbs: parsley, dill, or basil

  1. Combine tomatoes, cucumbers, and red onion in a bowl.
  2. In a small bowl, whisk together olive oil, vinegar/lemon juice, sugar, salt, and pepper.
  3. Pour dressing over vegetables and toss gently.
  4. Marinate at least 15–20 minutes (or up to a few hours) in the fridge.
  5. Garnish with fresh herbs and serve.
