🥔 Loaded Potato Soup (Creamy & Comforting)

A loaded potato soup is a thick, creamy soup made with potatoes and classic “loaded baked potato” toppings like cheese, bacon, and green onions.


🧾 Ingredients

  • 4–5 medium potatoes (peeled and diced)
  • 1 small onion (chopped)
  • 2–3 cloves garlic (optional)
  • 3–4 cups milk (or half milk, half cream for extra richness)
  • 2–3 tbsp butter
  • 2–3 tbsp flour (for thickening)
  • Salt & black pepper to taste
  • 1 cup shredded cheddar cheese
  • 4–6 slices cooked beef bacon (crumbled)
  • Green onions (for topping)

👨‍🍳 How to Make It

  1. Cook potatoes
    • Boil diced potatoes in salted water until soft (about 10–15 minutes). Drain and set aside.
  2. Make the base
    • In a pot, melt butter.
    • Add onion (and garlic if using) and cook until soft.
  3. Thicken the soup
    • Stir in flour and cook for 1 minute.
    • Slowly add milk while stirring to avoid lumps.
  4. Add potatoes
    • Add cooked potatoes and gently mash some of them in the pot for a thicker texture.
  5. Make it “loaded”
    • Stir in cheese until melted.
    • Add salt and pepper to taste.
  6. Serve
    • Top with crumbled bacon, extra cheese, and green onions.
