🍋 Lemon Buttermilk Pound Cake

🧾 Ingredients

  • 1 cup (225g) Butter (softened)
  • 2 cups sugar
  • 4 eggs
  • 2 ½ cups all-purpose flour
  • 1 cup Buttermilk
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Zest of 1–2 lemons
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract

Optional glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice

👩‍🍳 Instructions

  1. Preheat oven to 170°C (340°F). Grease a loaf or bundt pan.
  2. Cream butter + sugar until light and fluffy.
  3. Add eggs one at a time, mixing well.
  4. In another bowl, mix flour, baking powder, baking soda, and salt.
  5. Add dry mix and buttermilk alternately into the butter mixture.
  6. Stir in lemon zest, lemon juice, and vanilla.
  7. Pour into pan and bake for 50–65 minutes, until a toothpick comes out clean.
  8. Cool before removing from pan.

🍋 Optional glaze

Mix powdered sugar + lemon juice and drizzle over cooled cake.
