🍗 Jerk chicken with Rice and Gravy

Jerk chicken is a classic dish from Jamaican cuisine, known for its spicy, smoky, and aromatic flavor. The chicken is marinated in a blend of scotch bonnet peppers, allspice, thyme, garlic, and ginger, then grilled or roasted. It’s traditionally served with rice and a flavorful gravy or sauce.

🌶️ Jerk Chicken Marinade Ingredients

  • 2–3 lbs chicken (legs, thighs, or whole)
  • 2–3 scotch bonnet peppers (or habaneros for milder heat)
  • 3 cloves garlic
  • 1 small onion
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp allspice
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp lime juice or vinegar
  • Salt and black pepper

🍚 Rice and Gravy Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tbsp butter or oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 tbsp flour (for thickening gravy)
  • Salt and pepper

👩‍🍳 Instructions

  1. Marinate the chicken
    • Blend peppers, garlic, onion, thyme, allspice, cinnamon, nutmeg, sugar, soy sauce, lime juice, salt, and pepper.
    • Rub over chicken and marinate for at least 2–4 hours, preferably overnight.
  2. Cook the chicken
    • Grill over medium heat for 30–40 minutes, turning occasionally.
    • Or bake in a 375°F (190°C) oven for 45–50 minutes until fully cooked.
  3. Prepare the rice
    • Sauté onions and garlic in butter or oil until soft.
    • Add rice, toast briefly, then add chicken broth.
    • Simmer covered for 15–20 minutes until rice is fluffy.
  4. Make the gravy
    • In the same pan used for chicken, stir in flour to absorb drippings.
    • Add broth, whisk, and simmer until thickened. Season with salt and pepper.
  5. Serve
    • Plate the rice, top with juicy jerk chicken, and drizzle with rich gravy.

🍴 Tips & Variations

  • Add beans to rice for a traditional “rice and peas” side.
  • For smoky flavor, use a charcoal grill or add liquid smoke if baking.
  • Adjust heat by using fewer peppers or removing seeds.
  • Pair with fried plantains or steamed vegetables for a full Caribbean feast.

If you want, I can also make a quick stovetop version of jerk chicken with instant rice and easy gravy for a faster weeknight meal.

Do you want me to do that?
