Italian sausage soup

Here’s a hearty and flavorful Italian Sausage Soup recipe 🍲🌿—perfect for a cozy meal:


🥘 Ingredients (4–6 servings):

  • 1 lb (450g) Italian sausage (mild or spicy, casings removed)
  • 1 small onion, chopped
  • 2–3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 cup pasta (like ditalini, elbow, or small shells)
  • 2 cups fresh spinach or kale
  • Salt & pepper to taste
  • Olive oil for sautéing

👩‍🍳 Instructions:

1. Cook the Sausage

  • In a large pot, heat a little olive oil
  • Cook sausage until browned, breaking it into small pieces
  • Remove and set aside

2. Sauté Vegetables

  • In the same pot, add onion, carrots, celery, and garlic
  • Cook 5–7 minutes until softened

3. Simmer the Soup

  • Return sausage to the pot
  • Add diced tomatoes, broth, Italian seasoning, and red pepper flakes
  • Bring to a boil, then reduce heat and simmer 15–20 minutes

4. Add Pasta & Greens

  • Stir in pasta and cook until tender
  • Add spinach or kale during the last 2–3 minutes
  • Season with salt and pepper

5. Serve

  • Ladle into bowls and optionally top with grated Parmesan cheese and fresh parsley

💡 Tips:

  • Use a mix of sweet and spicy sausage for extra depth
  • Swap pasta for rice or beans for a lower-carb version
  • Freeze leftovers in portions; reheat gently on the stove
