🧾 Ingredients (Serves 2–3)

Noodles

  • 8 oz fettuccine, linguine, or spaghetti
  • 2 tbsp olive oil

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 small zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 3–4 cloves garlic, minced
  • 1 small onion, sliced

Sauce

  • ¼ cup dry white wine
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • ½ tsp red pepper flakes (adjust to taste)
  • Salt & black pepper to taste
  • 2–3 tbsp grated Parmesan cheese
  • Fresh basil or parsley for garnish

👩‍🍳 Instructions

1️⃣ Cook Noodles

  • Boil pasta according to package directions until al dente.
  • Drain and toss with 1 tbsp olive oil to prevent sticking.

2️⃣ Sauté Protein & Veggies

  • Heat olive oil in a large skillet over medium-high heat.
  • Cook protein until browned; remove and set aside.
  • Sauté garlic, onion, bell pepper, and zucchini 3–4 minutes until slightly tender.
  • Add cherry tomatoes and cook another 2 minutes.

3️⃣ Make the Sauce

  • Pour in white wine and simmer 2–3 minutes to reduce slightly.
  • Stir in soy sauce, tomato paste, red pepper flakes, salt, and pepper.

4️⃣ Combine

  • Add cooked noodles and protein to the skillet.
  • Toss well to coat noodles in sauce.
  • Sprinkle grated Parmesan and stir gently.

5️⃣ Serve

  • Garnish with fresh basil or parsley.
  • Optional: drizzle extra olive oil or a squeeze of lemon for brightness.

  • Adjust wine and soy sauce ratios to control saltiness and flavor intensity.
