🥘 Ingredients (6–8 servings)

For the pudding:

  • 1 cup sugar
  • ¼ cup all-purpose flour
  • Pinch of salt
  • 3 cups whole milk
  • 3 large eggs, separated
  • 2 tsp vanilla extract
  • 2–3 ripe bananas, sliced

For the topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Optional: Nilla wafers or shortbread cookies for layering

  1. Make the pudding base:
    • In a saucepan, whisk together sugar, flour, and salt.
    • Gradually whisk in milk. Cook over medium heat until thickened, about 5–7 minutes.
    • In a small bowl, whisk egg yolks, then temper by adding a little hot milk mixture to them. Stir egg yolks back into the saucepan.
    • Cook 2–3 more minutes until pudding is thick. Remove from heat, stir in vanilla.
  2. Layer the dessert:
    • In a serving dish, place a layer of Nilla wafers (optional), then a layer of banana slices, followed by a layer of pudding. Repeat until dish is full, finishing with pudding on top.
  3. Make the whipped topping:
    • Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Spread over pudding.
  4. Chill:
    • Refrigerate for at least 2–3 hours (or overnight) to allow flavors to meld.
  5. Serve:
    • Garnish with banana slices or crushed cookies on top.

Pro tip: If you want extra creamy pudding, you can fold in a little cream cheese into the pudding before chilling—it adds a velvety texture without overpowering the banana flavor.
