Here’s a simple and tasty Fried Rice recipe 🍚🥕🥚 — perfect for using leftover rice and veggies.


Ingredients (Serves 4)

  • 3 cups cooked rice (preferably day-old for best texture)
  • 2 tbsp vegetable oil or sesame oil
  • 2 eggs, lightly beaten
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 2–3 tbsp soy sauce (adjust to taste)
  • 1 tsp sesame oil (optional, for extra flavor)
  • Salt & pepper to taste
  • Optional garnish: sliced green onions or sesame seeds

Instructions

  1. Cook the eggs
    • Heat 1 tbsp oil in a large skillet or wok over medium-high heat.
    • Scramble the eggs until just set. Remove from the pan and set aside.
  2. Sauté aromatics & veggies
    • Add remaining oil to the pan.
    • Sauté onions for 2–3 minutes until translucent.
    • Add garlic and mixed vegetables; cook 3–4 minutes until tender.
  3. Add rice
    • Stir in the cooked rice, breaking up any clumps.
    • Cook 3–5 minutes, stirring frequently, until heated through.
  4. Season
    • Add soy sauce, sesame oil (if using), and cooked eggs.
    • Stir well to combine and heat through.
    • Season with salt and pepper to taste.
  5. Serve
    • Garnish with sliced green onions or sesame seeds.
    • Serve hot as a side dish or a main course.

Tips

  • Day-old rice works best because it’s dryer and fries better without getting mushy.
  • Protein boost: Add cooked shrimp, chicken, or sausage.
  • Extra flavor: Add a splash of oyster sauce or a pinch of crushed red pepper flakes.
  • Quick veggie option: Frozen mixed vegetables work great for convenience.
