🥣 Creamy Reuben Soup

🛒 Ingredients

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups cooked corned beef, chopped
  • 2 cups sauerkraut, drained (rinse if you prefer milder flavor)
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • 2 tbsp flour
  • 1 tsp caraway seeds (optional, but classic flavor)
  • Salt & black pepper to taste

  1. Sauté base
    Melt butter in a large pot. Add onion and cook until soft, then stir in garlic.
  2. Make it creamy
    Sprinkle in flour and cook for 1–2 minutes, stirring constantly.
  3. Add liquids
    Slowly whisk in beef broth. Bring to a gentle simmer.
  4. Build flavor
    Add corned beef, sauerkraut, and caraway seeds. Simmer for about 15 minutes.
  5. Finish with cream & cheese
    Stir in heavy cream and Swiss cheese. Cook until cheese melts and soup is smooth.
  6. Season & serve
    Taste and adjust salt and pepper.

  • Top with toasted rye bread croutons
  • Add extra melted Swiss cheese on top
