🥬 Collard Greens

Ingredients

  • 1 large bunch collard greens, chopped
  • 4 slices bacon or a smoked turkey leg
  • 1 small onion, chopped
  • 2 cloves garlic
  • 4 cups chicken broth
  • Salt, pepper, and a pinch of red pepper flakes

Instructions

  1. Cook bacon (or smoked turkey) in a pot until flavorful.
  2. Add onion and garlic; cook until soft.
  3. Add collard greens and broth.

Ingredients

  • 4 catfish fillets

  • Oil for frying

Instructions

  1. Season catfish with salt and pepper.
  2. Mix cornmeal, flour, paprika, and garlic powder.
  3. Coat the fish in the mixture.
  4. Fry in hot oil for 4–5 minutes per side until golden and crispy.

🫘 Black-Eyed Peas

Ingredients

  • 2 cups black-eyed peas (soaked if dried)
  • 1 smoked ham hock or bacon
  • 1 small onion
  • 4 cups water or broth
  • Salt and pepper

Instructions

  1. Add everything to a pot.
  2. Simmer 45–60 minutes until peas are tender.
  3. Season to taste.

🥬 Boiled Cabbage

Ingredients

  • 1 head cabbage, chopped
  • 2 tbsp butter
  • Salt and pepper
  • Optional: a little bacon

Instructions

  1. Add cabbage to a pot with a little water.
  2. Cook 10–15 minutes until tender.
  3. Drain and toss with butter, salt, and pepper.
