Chipotle Chicken Recipe

Ingredients:

  • 4 chicken breasts (or thighs)
  • 2–3 chipotle peppers in adobo sauce (canned)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime

Instructions:

  1. Make the marinade: Blend chipotle peppers, garlic, olive oil, cumin, paprika, salt, pepper, and lime juice until smooth.
  2. Marinate the chicken: Coat the chicken with the marinade and refrigerate for at least 1 hour (overnight is best).
  3. Cook the chicken:
    • Grill: Preheat grill to medium-high and cook 6–8 min per side.
    • Pan: Heat a skillet with a little oil and cook 6–8 min per side until cooked through.
  4. Serve: Slice and serve in tacos, burrito bowls, over rice, or with roasted vegetables.
