Chicken zucchini fritters

Here’s a simple and delicious way to make Chicken Zucchini Fritters—crispy on the outside, tender on the inside, and packed with flavor.


Ingredients (Serves 3–4)

  • 1 large zucchini, grated
  • 1 cup cooked chicken, finely chopped or shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (or panko for extra crispiness)
  • 2 eggs
  • 1 small garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika or chili flakes (optional, for a kick)
  • Olive oil for frying

Instructions

  1. Prep Zucchini:
    • Grate zucchini and place in a clean kitchen towel.
    • Squeeze out excess water to prevent soggy fritters.
  2. Mix Ingredients:
    • In a large bowl, combine zucchini, chicken, Parmesan, breadcrumbs, eggs, garlic, salt, pepper, and paprika.
    • Mix until everything is well incorporated.
  3. Form Fritters:
    • Scoop 2–3 tablespoons of the mixture and shape into small patties.
  4. Cook:
    • Heat a few tablespoons of olive oil in a skillet over medium heat.
    • Cook fritters 3–4 minutes per side, until golden brown and cooked through.
  5. Serve:
    • Drain on paper towels and serve warm.
    • Optional dips: garlic aioli, sour cream, or tzatziki.

💡 Tips:

  • For extra crispiness, add a bit more breadcrumbs.
  • You can swap chicken for turkey or even keep it vegetarian with extra zucchini or corn.
  • Serve with a fresh salad for a light meal.
