Ingredients:

  • 4–6 bone-in or boneless chicken thighs
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional, for color)
  • 1 tsp dried herbs (thyme, rosemary, or Italian seasoning)
  • 2 tbsp olive oil or butter (optional, for richer flavor)

Instructions:

  1. Prep crockpot: Place sliced onions and garlic at the bottom of the crockpot.
  2. Season chicken: Rub chicken thighs with salt, pepper, paprika, and herbs. Place on top of the onions.
  3. Add liquid: Pour chicken broth around the chicken (not directly on top, to keep the seasoning intact).
  4. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
      Chicken should be tender and reach an internal temperature of 165°F (74°C).
  5. Optional crispiness: For crispy skin, remove chicken from crockpot and broil in the oven for 3–5 minutes.
  6. Serve: Spoon some of the juices and onions over the chicken. Serve with rice, potatoes, or veggies.
