Chicken soup

Here’s a simple, classic chicken soup recipe 🍲🐔 — warm, comforting, and perfect for any day.


Ingredients (Serves 4–6)

  • 1 whole chicken (3–4 lbs) or 4–5 bone-in chicken pieces
  • 10 cups water or chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, quartered
  • 3 cloves garlic, smashed
  • 1–2 bay leaves
  • 1 tsp dried thyme (or fresh sprigs)
  • Salt & pepper to taste
  • Optional: parsley or dill for garnish
  • Optional: noodles, rice, or potatoes

Instructions

  1. Cook the chicken
    • Place chicken in a large pot with water or broth.
    • Add onion, garlic, bay leaves, and thyme.
    • Bring to a boil, then reduce heat and simmer 45–60 minutes until chicken is fully cooked.
  2. Remove and shred chicken
    • Take chicken out and let it cool slightly.
    • Remove skin and bones, then shred the meat.
  3. Strain the broth (optional)
    • You can strain the broth to remove solids for a clear soup.
    • Return the broth to the pot.
  4. Add vegetables
    • Add carrots, celery, and any other veggies you like.
    • Simmer 10–15 minutes until tender.
  5. Add chicken & optional starch
    • Stir in shredded chicken.
    • If using noodles, rice, or potatoes, add now and cook until tender.
  6. Season & serve
    • Taste and adjust salt and pepper.
    • Garnish with fresh parsley or dill. Serve hot.
