Chicken Macaroni Soup

Here’s a cozy and hearty Chicken Macaroni Soup 🍜🍗 — perfect for a comforting lunch or dinner.


Ingredients (Serves 4–6)

  • 2 cups cooked chicken, shredded or diced
  • 1 cup elbow macaroni or small pasta
  • 6 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt & pepper, to taste
  • Optional: ½ cup cream or milk for a creamier version

Instructions

  1. Cook vegetables
    • In a large pot, sauté onion, garlic, carrots, and celery in 1 tbsp oil over medium heat until softened (about 5 minutes).
  2. Add broth & pasta
    • Pour in chicken broth and bring to a boil.
    • Add macaroni and cook until just tender (about 7–9 minutes).
  3. Add chicken & seasonings
    • Stir in cooked chicken, thyme, parsley, salt, and pepper.
    • Simmer for another 5 minutes until heated through.
  4. Optional creamy version
    • Stir in cream or milk at the end for a richer texture.
  5. Serve
    • Taste and adjust seasoning.
    • Serve hot with bread or crackers.

Tips

  • Shortcut: Use rotisserie chicken for quick prep.
  • Extra flavor: Add a bay leaf while simmering, remove before serving.
  • Vegetable boost: Toss in peas, corn, or green beans for extra color and nutrients.
