Chicken Fritters

Ingredients

  • 1 lb cooked chicken, shredded or chopped
  • ½ cup all-purpose flour
  • ½ cup cornmeal (optional for extra crispiness)

  • ½ tsp black pepper
  • 2 large eggs, beaten

Instructions

1. Prepare the Batter

  • In a bowl, mix flour, cornmeal, baking powder, garlic powder, salt, and pepper.

2. Heat Oil

  • Heat 1–2 inches of oil in a skillet over medium heat to 350°F (175°C).

3. Fry the Fritters

  • Fry 3–4 minutes per side, until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.

4. Serve

  • Serve hot with dipping sauces like ranch, honey mustard, or spicy aioli.

Tips

  • For extra flavor, add 1 tsp paprika or cayenne pepper to the batter.
  • You can also bake fritters at 400°F (200°C) for 20 minutes for a lighter version.
