Instructions

1. Prepare the Crust

  • Press into the bottom of a 9-inch springform pan.
  • Bake 10 minutes and let cool.

2. Make the Filling

  • Beat cream cheese until smooth.
  • Add sugar and vanilla; mix well.
  • Beat in eggs one at a time until fully combined.
  • Stir in sour cream if using.

3. Assemble & Bake

  • Pour filling over the crust.
  • Bake 50–60 minutes, until the center is almost set (slightly jiggly is okay).
  • Cool at room temperature, then refrigerate at least 4 hours or overnight.

4. Serve

  • Slice with a warm knife for clean cuts.
