Cabbage, Sausage and Potato Soup

Here’s a hearty, comforting Cabbage, Sausage, and Potato Soup recipe 🥬🥔🌭—perfect for chilly days:


🥘 Ingredients (4–6 servings):

  • 1 lb (450g) smoked or Italian sausage, sliced or crumbled
  • 1 small head of cabbage, chopped
  • 3–4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp paprika
  • 1 tsp dried thyme (optional)
  • Salt & pepper to taste
  • Olive oil for sautéing
  • Optional: 1 bay leaf or a pinch of crushed red pepper

👩‍🍳 Instructions:

1. Cook the Sausage

  • In a large pot, heat a little olive oil
  • Brown the sausage until cooked through
  • Remove and set aside

2. Sauté Vegetables

  • In the same pot, sauté onion and garlic until fragrant
  • Add potatoes and cook 3–5 minutes

3. Simmer the Soup

  • Return sausage to the pot
  • Add chopped cabbage, broth, paprika, thyme, and bay leaf
  • Bring to a boil, then reduce heat and simmer 20–25 minutes until potatoes are tender and cabbage is soft

4. Season & Serve

  • Taste and add salt and pepper
  • Remove bay leaf before serving
  • Serve hot with crusty bread

  • Use smoked sausage for extra depth of flavor
  • Add a splash of apple cider vinegar at the end for brightness
  • This soup freezes well—store in airtight containers and reheat gently
