Ricotta Stuffed Zucchini (Light, Cheesy & Delicious) 🥒🧀

A healthy, low-carb dish that’s creamy, flavorful, and perfect as a side or main!


📝 Ingredients:

  • 3–4 medium zucchini
  • 1 cup ricotta cheese
  • ¼ cup grated parmesan
  • 1 egg
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • Salt & black pepper (to taste)
  • Optional: spinach, chili flakes, fresh herbs (basil/parsley)

👩‍🍳 Instructions:

1. Prep the Zucchini

  • Slice zucchini in half lengthwise.
  • Scoop out the center to create “boats.”

2. Make the Filling

  • In a bowl, mix ricotta, parmesan, egg, garlic, salt, pepper, and optional extras.

3. Stuff the Zucchini

  • Fill each zucchini boat with the ricotta mixture.

4. Bake

  • Place in a greased baking dish.
  • Drizzle with olive oil.
  • Bake at 180°C (350°F) for 20–25 minutes until tender and golden.

5. Serve

  • Garnish with herbs and a sprinkle of parmesan.

🔥 Tips:

  • Add cooked minced chicken or beef for a protein boost.
  • Broil for 2–3 minutes at the end for a golden top.
  • Serve with garlic bread or rice for a fuller meal.
