Classic Crumb Cake

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or plain yogurt

For the Crumb Topping:

  • 1 cup brown sugar
  • ½ cup all-purpose flour

  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat Oven
  • 350°F (175°C). Grease or line a 9×13-inch baking pan.
  1. Make the Cake Batter
  • In a bowl, mix flour, baking powder, baking soda, and salt.
  • In another bowl, cream together sugar and butter until fluffy.
  • Add eggs and vanilla, mixing well.
  • Alternately add dry ingredients and sour cream until smooth.
  1. Prepare the Crumb Topping
  • In a small bowl, mix brown sugar, flour, cinnamon, and melted butter until crumbly.
  1. Assemble
  • Pour cake batter into the prepared pan.
  • Sprinkle crumb topping evenly over the batter.
  1. Bake
  • Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  1. Cool & Serve
  • Let cool slightly before cutting into squares.
  • Optional: dust with powdered sugar before serving.

Optional Variations

  • Add chopped nuts (walnuts or pecans) to the crumb topping.
  • Stir in 1 cup berries or chopped apples into the batter for a fruity twist.
  • Drizzle with cream cheese glaze for extra richness.
