🥕 Moist & Spiced Carrot Cake

A soft, rich carrot cake packed with warm spices and topped with creamy frosting—perfect for tea time or dessert.

🥣 Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon powder
  • ½ tsp nutmeg (optional)
  • ½ tsp salt
  • 1 cup sugar (white or brown)
  • Âľ cup oil
  • 3 eggs
  • 2 cups grated carrots
  • 1 tsp vanilla essence
  • ½ cup chopped walnuts or raisins (optional)

For cream cheese frosting:

  • 200g cream cheese
  • ½ cup butter (softened)
  • 1–1 ½ cups powdered sugar
  • 1 tsp vanilla essence

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking pan.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, sugar, oil, and vanilla until smooth.
  4. Add dry ingredients into wet mixture and mix gently.
  5. Fold in grated carrots (and nuts if using).
  6. Pour into pan and bake for 35–45 minutes or until a toothpick comes out clean.
  7. Let it cool completely before frosting.

🍰 Frosting:

Beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy. Spread over cooled cake.
