🧾 Ingredients
- 500g ground beef
- 1 tbsp oil
- 1 onion (chopped)
- 2–3 bell peppers (any color, chopped)
- 2 cloves garlic (minced)
- 1 can diced tomatoes
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 1 cup cooked rice (or uncooked—see tip)
🔥 Instructions
- Cook beef: In a large pot, brown the ground beef. Drain excess fat.
- Sauté veggies: Add onion, bell peppers, and garlic. Cook until soft.
- Build soup: Stir in diced tomatoes, tomato paste, and broth.
- Season: Add Italian seasoning, salt, and pepper.
- Simmer: Cook for 20–25 minutes.
- Add rice: Stir in cooked rice and simmer 5 more minutes.

- Cooked rice: Add at the end (best texture)
- Uncooked rice: Add earlier with extra broth and cook longer
