Stuffed pepper soup

Stuffed Pepper Soup 🫑🍲

This soup tastes like classic stuffed peppers but is much easier to make in one pot.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 1 cup shredded mozzarella or cheddar cheese (optional)

Instructions

  1. Cook the beef
    In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add vegetables
    Stir in chopped onion, bell peppers, and garlic. Cook for about 3–4 minutes until slightly soft.
  3. Add tomatoes and broth
    Pour in diced tomatoes, tomato sauce, and beef broth. Stir well.
  4. Season and simmer
    Add Italian seasoning, pepper, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add rice
    Stir in cooked rice and cook for another 5 minutes.
  6. Serve
    Ladle into bowls and top with shredded cheese if desired.

Tips ✨

  • You can replace beef with ground turkey or chicken.
  • For a low-carb version, use cauliflower rice.
  • This soup tastes even better the next day.
