Instructions

1. Preheat Oven

  • Preheat oven to 350°F (175°C).

2. Whip Eggs and Sugar

  • In a large bowl, beat eggs and sugar together using a hand mixer or stand mixer.
  • Whip for 5–7 minutes until pale, thick, and fluffy.

3. Sift Dry Ingredients

  • In a separate bowl, sift together flour, baking powder, and salt.

4. Fold Ingredients Together

  • Gently fold the dry ingredients into the egg mixture in small batches, using a spatula.
  • Be careful not to deflate the mixture.
  • If using milk and melted butter, fold them in gently.

5. Bake

  • Pour batter into the prepared cake pan.
  • Bake for 25–30 minutes, or until a toothpick inserted comes out clean.

6. Cool

  • Let the cake cool in the pan for 10 minutes.
