Slow Cooker Stuffed Pepper Soup 🫑🍲

Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 2–3 bell peppers, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 4 cups beef broth
- 1 tsp Italian seasoning
- ½ tsp black pepper
- Salt to taste
- 1 cup cooked rice
- 1 cup shredded cheese (optional)
Instructions
- Brown the beef
Cook the ground beef in a pan over medium heat until browned. Drain excess fat. - Add to slow cooker
Transfer the cooked beef to the slow cooker. Add onion, bell peppers, garlic, diced tomatoes, tomato sauce, and beef broth. - Season
Stir in Italian seasoning, pepper, and salt. - Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. - Add rice
Stir in the cooked rice during the last 10–15 minutes of cooking. - Serve
