Slow-cooked glazed beef short ribs

Here’s a delicious way to make slow-cooked glazed beef short ribs that are tender, flavorful, and perfect for a cozy meal:


Ingredients:

  • 3–4 lbs beef short ribs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika (optional)
  • 1 tsp dried thyme or rosemary
  • 2 tbsp cornstarch + 2 tbsp water (for thickening glaze)

Instructions:

  1. Prep the ribs
    • Pat the short ribs dry with paper towels.
    • Season generously with salt and black pepper.
  2. Sear the ribs (optional but adds flavor)
    • Heat olive oil in a large skillet over medium-high heat.
    • Brown the ribs on all sides (2–3 minutes per side). Transfer to slow cooker.
  3. Make the sauce
    • In the same skillet, sauté onions until soft, then add garlic for 30 seconds.
    • Add beef broth, soy sauce, brown sugar, tomato paste, Worcestershire sauce, smoked paprika, and thyme.
    • Stir to combine and bring to a simmer.
  4. Slow cook
    • Pour the sauce over the ribs in the slow cooker.
    • Cover and cook on low for 6–8 hours or high for 4 hours, until the meat is tender and falling off the bone.
  5. Make the glaze
    • Remove ribs and set aside.
    • Pour the sauce into a small saucepan and bring to a simmer.
    • Mix cornstarch and water, then stir into sauce. Simmer until thickened into a glossy glaze.
  6. Glaze and serve
    • Brush the glaze over the ribs.
    • Serve with mashed potatoes, roasted vegetables, or rice.

💡 Tip: For extra flavor, you can add a splash of balsamic vinegar or a drizzle of honey to the glaze.
