Roast chicken

Here’s a classic Roast Chicken 🍗 recipe—juicy, flavorful, and perfect for a comforting meal:


Ingredients (Serves 4–6)

  • 1 whole chicken (about 1.5–2 kg / 3–4 lbs)
  • 2–3 tbsp olive oil or melted butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or rosemary (or a mix)
  • 1 lemon, halved
  • 1 onion, quartered
  • Optional: vegetables like carrots, potatoes, and celery for roasting

Instructions

  1. Preheat Oven
    • Preheat oven to 200 °C (400 °F).
  2. Prepare the Chicken
    • Pat the chicken dry with paper towels.
    • Rub olive oil or butter all over the chicken.
    • Season inside and out with garlic, salt, pepper, and herbs.
    • Stuff the cavity with lemon halves and onion quarters.
  3. Roast the Chicken
    • Place chicken breast-side up in a roasting pan.
    • Optionally, surround with chopped vegetables for roasting.
    • Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature of the thickest part of the thigh reaches 75 °C (165 °F).
    • Baste occasionally with pan juices for extra flavor.
  4. Rest the Chicken
    • Remove from oven and let rest 10–15 minutes before carving.
  5. Serve
    • Carve and serve with roasted vegetables, mashed potatoes, or a simple salad.

  • For crispy skin, pat the chicken very dry and roast uncovered.
  • Add fresh herbs like parsley, thyme, or rosemary under the skin for extra flavor.
  • Save pan drippings to make a simple gravy.
